    | 1. Combine all dry ingredients. | 2. Mix well. | 3. Add eggs, egg whites,chocolate chips, vanilla and almond extract. | 4. add water. | 5. FLOUR HANDS. | 6. Mix well into dough (It will be VERY sticky). | 7. Flour a flat surface. | 8. Knead dough 8-9 times on floured surface. | 9. FOR Small Biscotti, cut dough in half, for large, leave dough large. | 10. Shape into 14-16" log. | 11. Place on greased cookie sheet. | 12. press into 1/2 thickness on cookie sheet. | 13. OPTIONAL-brush chocolate flavored liquor on top and sides of log. | 14. BAke at 350 for 30 minutes. | 15. Remove and cool on wire rack. | 16. When cool, cut diagnolly into 1/2" bars. | 17. Place bars cut side down on cookie sheet. | 18. Bake 5-10 minutes each side depending on how crunchy you like your biscotti Cool and Enjoy. | ---------------------------------------------------------------------------
