    | 1. Preheat oven to 425°F (220°C) and bring a large pot of salted water to a boil. | 2. Meanwhile, in a large bowl, combine cauliflower, olive oil and bacon. Season with salt and pepper and mix well. | 3. Spread mixture out in a large roasting pan and roast, stirring occasionally, until cauliflower is golden and bacon is crisp, (about 15 to 18 min). | 4. Stir in nuts, shallots and thyme. | 5. Return pan to oven and roast 3 to 5 minute longer. | 6. Cook tortellini according to package directions, drain well and toss gently with the roasted cauliflower mixture. | 7.
