    | 1. In a large sauce pan, add olive oil and heat it on high. Add the sliced sausage and cook until well browned. Make sure to stir often or tends to burn. | 2. Once browned, remove from pot and set aside. | 3. Heat the olive oil over med-hi heat. Add the diced onion and peppers. Add a pinch of salt and simmer until onions until well softened. | 4. Add garlic and mushrooms and cook until garlic just starts to brown. | 5. Add diced tomatoes and lower heat to med-low heat and cover. Let simmer for 10 – 15 minutes. | 6. Remove cover and add tomato sauce herbs, crushed pepper, and cooked sausage. | 7. Cover and cook on low to med-low heat for at least 20 minutes stirring from time to time.
