    | 1. Cook rice until tender. | 2. Whilst rice is cooking whisk in a medium bowl, eggs, cheese, parsley, tomatoes, olives, pepper and salt. | 3. Cover and refrigerate. | 4. When rice is cooked, drain and slowly pour in egg mixture, stirring quickly to prevent egg from scrambling. | 5. Cool mixture for 1 hour in refrigerator. | 6. Place breadcrumbs in bowl. | 7. Dampen hands and roll rice mixture into 3cm balls and coat in breadcrumbs. | 8. In small skillet heat oil. | 9. Fry rice balls, turning as needed to ensure even browning. | 10.
