Reduce heat to low and simmer for 15 minutes. | 3. Stir in cabbage, cover and simmer, stirring, 4-5 minutes until cabbage is wilted and quinoa is tender. | 4. Transfer 1/3 of soup to food processor and puree until smooth. Return to soup pot and stir in bacon.
