    | 1. Bring potatoes to a boil on high heat. Simmer on medium-high heat until the center of the potatoes are tender when pricked with a fork. This should take about 20 minutes. | 2. Turn off heat. Drain the potatoes and return them to the pot and allow to completely dry out over remaining heat. Mash the potatoes until smooth. | 3. Place warm mashed potato into a medium bowl. Stir in the flour, salt and melted butter. Mix gently until a soft dough forms. | 4. On a well floured surface, knead the dough gently. The dough will be sticky. Use a (floured) rolling pin to flatten into a circle about 9 inches in circumference and 1/4 inch thick. | 5. Cut into quarters using a floured knife. | 6. Heat a skillet to medium high heat. Once hot, melt the butter in the skillet. | 7. Sprinkle a little flour into the base of the skillet and cook the farls for 3 minutes on each side or until evenly browned. | 8.
