    | 1. Combine the first 5 dry ingredients EXCEPT for 1/3 cup of the white flour. | 2. Add the butter, cut into bits, and cut into the dry mixture until it resembles coarse meal. | 3. Add oats and sesame seeds and mix again. | 4. Add the buttermilk gradually. | 5. Stir until it all forms a ball. | 6. Turn the dough out on a floured surface. | 7. Knead in the reserved white flour, as much as needed to make a soft dough. | 8. Divide dough into fourths. | 9. Shape each quarter into a round mini-loaf and flatten just a bit. | 10. Spray baking sheet with cooking spray and arrange mini loaves. | 11. Cut the top of each loaf with a shallow "x". | 12. If you wish, you may brush the tops with more buttermilk and sprinkle with more sesame seeds. | 13. Bake at 425 for 15-20 minutes, until lightly browned. | 14.
