    | 1. Special equipment: aebelskiver pan. | 2. Mix first the flour, baking powder, baking soda and salt in large bowl. | 3. Whip the egg yolks in another bowl, and then add in the granulated sugar. Add the butter and stir well. Slowly pour in the buttermilk while stirring. | 4. Pour the wet mixture into the dry mixture and stir. | 5. In another bowl, whip the egg whites to a fluffy consistency with soft peaks. Fold into the batter and mix together softly, being careful not to over stir. | 6. Spray nonstick cooking spray into the wells of the aebleskiver pan. Drop in a small amount of butter for flavor. Spoon in the batter, filling the wells. Pop in 3 to 4 blueberries and let cook for a minute. | 7. Lift and three-quarter-turn each one (we use metal chopsticks to turn the balls), allowing the batter to spill out and cook. Continue turning until a perfect globe is formed. | 8. Sprinkle powdered sugar on top and spoon a dollop of lemon curd right on top. Top with a blueberry for garnish and enjoy! | ---------------------------------------------------------------------------
