    | 1. Heat oil in a large pan that has a tight fitting cover. Add rice and saute over medium heat until the grains are starting to become translucent. Add onion then saute a few minutes more. When the onion is soft add the spices, stirring to mix in well, add the stock then tomatoes. When it comes to a boil put on the lid and turn heat to low.
