    | 1. Beat the eggs and granulated sugar in a large bowl until thoroughly blended. | 2. Beat in the vegetable oil and apple juice. | 3. Combine the flour, baking powder and salt. | 4. Stir into the egg mixture, beating just until smooth. | 5. Spread half of the batter in a greased 9" x 9" baking pan. | 6. Combine the apples, brown sugar and cinnamon. | 7. Toss lightly to coat. | 8. Spread over the batter in the pan. | 9. Cover with the remaining batter. | 10. Bake in a preheated 350 degree F oven for 50 to 55 minutes or until a toothpick inserted in the centre comes out clean. | 11.
