    | 1. In a large sauce pan over medium heat, sauté onion in hot oil until golden brown. | 2. In the microwave or in another saucepan, heat the broth until nearly boiling. Thin the peanut butter with some of the hot cooking liquid. Add peanut butter to onion and tomato mixture, stirring to mix thoroughly. Reduce heat to a simmer. | 4. Add remaining ingredients except chicken and simmer, uncovered, until vegetables are bite tender, about thirty minutes. | 5. Stir in diced chicken and heat through. Check seasoning.
