    | 1. Mix peanut sauce ingredients and set aside. | 2. Heat 2 Tbs peanut oil in a large skillet or wok on medium-high heat. | 3. Add chicken and cook until chicken is cooked through. Remove from skillet and set aside. | 4. Heat remaining 2 Tbs of peanut oil in the skillet. | 5. Add veggies and saute until tender crisp. | 6. Toss the veggies with the chicken and peanut sauce, then serve over rice (I prefer short-grain brown rice). | 7. Tip: You can also marinate the chicken in some of the peanut sauce overnight to let it soak up more of the flavor.
