    | 1. BARBECUE SAUCE: | 2. Combine all ingredients and mix well. | 3. Season to taste with salt and white pepper. | 4. Set aside. | 5. SAFFRON RICE: | 6. Brush pan with clarified butter. | 7. Add rice, chicken stock, saffron, cayenne pepper and onion. | 8. Stir. | 9. Cover pan with foil and bake at 400°F for 1 hour and 10 minutes. | 10. When rice is done, remove foil and stir in green onions and red pepper. | 11. Season to taste with salt and white pepper. | 12. BEEF: | 13. Place meat and vegetables alternately on skewer, season with salt and pepper and brush with oil. | 14. Grill on both sides to medium-rare. | 15. Remove from grill and brush generously with barbecue sauce. | 16. Place on saffron rice and garnish with more sauce. | 17.
