Caramelized Onion-Flavored Rice

    | 1. Rice rice well, cover with 3 inches of water and soak for up to 2 hours. | 2. Heat oil in a large saucepan. | 3. Add bay leaves, cinnamon and cloves. | 4. Saute until fragrant (about one minute). | 5. Stir in onions. | 6. Saute stirring frequently until caramelized (20 to 25 minutes). | 7. Reduce heat as onions begin to color. | 8. Add a spoonful of water to prevent burning if necessary. | 9. When the onions are caramelized, drain rice and add to onions. | 10. Mix well. | 11. Add 3 1/2 cups of water and salt. | 12. Cover and bring to a boil over high heat. | 13. Reduce heat to low, cover and cook for 25 minutes (without peeking). | 14. Remove from heat, leave lid ajar to allow steam to escape. | 15.
