    | 1. Pick, wash and soak rice in sufficient water for half an hour. | 2. Soak raisins in water for 15 minutes. | 3. Squeeze out excess water. | 4. Chop dates roughly. | 5. Finely shred orange rind. | 6. Boil milk in a non-stick saucepan. | 7. Drain and add rice to the boiling milk, reduce heat and cook, stirring continuously till the rice is soft and the milk is completely absorbed. | 8. Remove from heat and cool to room temperature. | 9. Combine cooked rice withhoney, raisins, vanilla essence, chopped dates, shredded orange rind and fresh orange juice. | 10. Pour into a medium-sized ceramic or glass ovenproof dish. | 11. Bake the pudding in the preheated oven at 160C degrees for 15 minutes. | 12. Serve warm or chilled. | ---------------------------------------------------------------------------
