    | 1. First, prepare the filling for this dish. | 2. For this, do the following: Heat oil in a pan. | 3. Add cumin seeds and allow to crackle. | 4. Add greenpeas, ginger and green chilli. | 5. Mix well. | 6. Once the raw smell of ginger is gone and the green peas are cooked, add corriander powder, kasori methi, red chilli powder, chat masala and salt. | 7. Mix well. | 8. Add corriander leaves and mix well. | 9. Now prepare the dough. | 10. For this, put ajwain seeds, oil, flour and water in a bowl. | 11. Knead well and make dough. | 12. Roll lengthwise. | 13. Now make small round balls out of this (like you would make for rotis/chapatis). | 14. Roll out on a lightly floured board till about 6 inches in diameter. | 15. Now, put 1-2 tsps. | 16. of the above prepared stuffing in the center. | 17. Close and give shape of a potli ('potli'is a Hindi word which means,"Small Basket"). | 18. Likewise, repeat for all the balls of dough. | 19. Heat oil in a deep frying pan. | 20. Drop potlis, gently, into the hot oil and deep fry till golden brown. | 21. Remove from oil. | 22. Drain on clean kitchen towels/napkins. | 23. Serve hot. | ---------------------------------------------------------------------------
