    | 1. Trim the ends from the courgettes and cut into 1/2-in. slices. | 2. Heat the oil in a wok or large frying pan. Fry the mustard seeds until they start to splutter (about 2 minutes). | 3. Add the onion and garlic, and fry for about 5 minutes. | 4. Add the chili powder, ground coriander, cumin, ground turmeric and salt, and continue to fry for about 3 minutes. | 5. Add the courgette slices and fry for a further 5 minutes. | 6. Add tomato paste, diced tomatoes, and water to the frying pan and simmer until the sauce thickens (about 10 minutes). | 7.
