    | 1. Thaw meat if it is still slightly frozen. | 2. Place in a large stainless steel bowl. | 3. Sprinkle with salt. | 4. Let set for 30 minutes. | 5. Drain. | 6. DO NOT SQUEEZE. | 7. Clean onion, ginger and garlic. | 8. Garlic should"slip" right out of it's skin if soaked long enough. | 9. Process in food processor until thoroughly minced. | 10. Sprinkle sugar on drained meat. | 11. Mix with your hands until sugar is melted. | 12. Gradually stir in onion/garlic/ginger mixture. | 13. Mix in until disbursed throughout meat. | 14. Pour soy sauce, sesame oil, and rice wine over meat. | 15. Stir. | 16. Let set for about 30 minutes. | 17. You may need to add more soy sauce if meat is not easily turned in marinade. | 18. Pour 1/2 to 3/4 bottle Pepsi or Coke over meat. | 19. Stir. | 20. Sprinkle with MSG. | 21. Sprinkle scallions over meat and stir. | 22. Invert a ceramic plate and place over meat. | 23. Cover meat and plate with plastic wrap and weigh it down with a quart jar full of water. | 24. Place in refrigerator overnight. | 25. If using a gas grill, start and place on highest setting. | 26. If using charcoal, allow charcoal to become white before using. | 27. Add a few briquettes as you go along to keep the fire hot. | 28. Pour meat into a colander allow to drain for several minutes. | 29. Replace meat to bowl. | 30. You will have some marinade left over. | 31. Place single layer meat on grill for abut 45 seconds per side. | 32. It will blacken on the tips, but do not allow to blacken in the middle. | 33. The pieces should glisten. | 34. Place in an electric roaster set at low until finished. | 35. Drizzle some of the marinade over done pieces so they do not dry out. | 36.
