    | 1. Wash and drain beans. | 2. Place in a bowl and mash. | 3. Add spices and work them in. | 4. (I use my hands). | 5. In a small fry pan, (medium heat) 3 tbls, of olive oil. | 6. Add beans, stir and warm through. | 7. Press bean down and lower heat. | 8. Let beans brown on the bottom for 3-4 minutes. | 9. Do not stir. | 10. Loosen edges with spatula and turn upsidedown on a heated platter. | 11. Don't worry if it doesn't come out in one piece, just glop it back together. | 12. Drizzle with remaining olive oil and cover with Parmesan cheese. | 13. Serve hot or cold. | ---------------------------------------------------------------------------
