Reduce the heat to medium, stir in the garlic and seeded minced jalapenos, and cook, stirring constantly, until fragrant, about 1 1/2 minutes. | 8. Stir in the pureed tomatoes and onion, chicken broth, tomato paste, and salt. | 9. Increase the heat to medium-high and bring to a boil. | 10. Cover, transfer to oven, and bake until the liquid is absorbed and rice is tender, 30-35 minutes. Stir well halfway through cooking time. | 11. Stir in cilantro and reserved minced jalapeno with ribs and seeds to taste. | 12. Serve immediately. | ---------------------------------------------------------------------------
