    | 1. Cut chicken into cubes. | 2. In a large skillet over low heat melt butter. | 3. Add curry powder and swirl it around until well mixed. | 4. Slowly add coconut milk and whisk as you add it. | 5. Stir until well mixed. | 6. Set aside on very low heat. | 7. In a separate skillet heat olive oil over medium heat. | 8. Saute the onion and garlic until lightly brown. | 9. Add cubed chicken and cook until chicken is lightly cooked. | 10. Add potatoes and mix then add curry/coconut milk mixture. | 11. Mix again. | 12.
