    | 1. Disjoint chicken, cut into serving portions, put into a bowl and sprinkle with 2-3 tablespoons lemon juice. | 2. Sprinkle lightly with salt and pepper, put aside for 5 minutes. | 3. Pat the pieces dry with paper toweling and gently fry in oil until browned all over, moving the pieces in the pan frequently. | 4. Transfer to an ovenproof dish. | 5. Add onion and garlic to pan and fry gently until softened, remove and add to the chicken pieces. | 6. Top with the tomatoes, raisins, lemon rind, salt and pepper. | 7. Put lid on dish, or cover with foil and bake in a moderate oven for about 40 minutes. | 8.
