    | 1. In a large pot, heat the oil, then add the onions & garlic and saute until softened. | 2. To the onions, add the peppers, carrots & celery and saute for several minutes. Once the vegetables are soft, add the ground beef to the pan and cook on medium heat until browned. | 3. Stir in the dry spices and saute for a minute or until fragrant. | 4. Puree or mash 1 cup of the black beans. Add the pureed & whole beans, tomatoes, corn, chipotle pepper and water to the pot. Add salt and pepper to taste. Bring to a boil, then reduce the meat and simmer uncovered for 30 minutes, or until carrots are tender, stirring occasionally. | ---------------------------------------------------------------------------
