    | 1. Brown beef and onion in a large skillet til beef no longer pink. | 2. Drain off excess grease. (I use a paper towel and run it across the bottom of the pan, soaking up the grease. | 3. Stir in rice and beans, tomatoes, corn and 2-1/2 cups water. | 4. Bring to a boil, reduce heat, cover and simmer for 20 minutes or until water has been absorbed. | 5. Meanwhile chop cilantro. | 6.
