    | 1. Set roast out and allow to come to room temp,about an hour. | 2. Preheat oven 275 (low temp). | 3. Combine spices in a bowl. | 4. Rub spices all over the roast. | 5. Heat skillet on med/high heat and oil. | 6. Brown meat on all sides. | 7. Place roast on rack or vegetables in baking dish. | 8. Place in oven and turn heat down to 225-250 (depending your oven). | 9. When internal temp reaches 130, or close to it for more rare results, remove from oven and tent with tinfoil for 15 minutes before carving. | 10. My roast was perfectly cooked in about 7 hours. | 11.
